Mini Oreo Cheesecake

INGREDIENTS

  • 16oz Cream Cheese
  • 1/2 cup Sour Cream
  • 1/2 cup Sugar
  • 1 tsp Vanilla
  • 2 Eggs
  • 1 pkg Oreo of your choice

DIRECTION

  1. Preheat Oven at 275 F
  2. Load everything into a mixing bowl except the Oreo cookies, use hand mixer, blend until smooth. To make it easier bring cream cheese out to room temperature ahead of time.
  3. Line cupcake tray with paper cup cake cups. Put a full Oreo into each cup. Save some Oreos to be crushed for topping
  4. Spoon filling into each cup, leave about half inch on top
  5. Bake at 275F for 22 mins.
  6. Sprinkle Crushed Oreos on top
  7. Let cool before removing from tray gently. Refrigerate for at least 3 hrs before serving

Yield around 18 cheese cakes.

NOTES From baking

  1. Don’t try to take the cheese cakes out when it’s still warm, it’ll peel from the paper and lose its shape.
